If your working with me and you have found yourself recently banned from gluten yet craving some kind of bread like wrap then this one is for you. It’s made from red lentils so not only are they full of phytonutrients but protein too. The most amazing thing about them is that there is quite literally one ingredient! Bet you didn’t see that coming!

What you put inside them is completely up to you. In keeping with my own metabolic balance perimeters I panfried (in a non stick pan so that I didn’t need any oil) some red cabbage, red peppers and leaks then added a good handful of rocket leaves which meant that I could gobble away without worrying about my food affecting my plan. Happy Days!

Ingredients

  • 60g Red Lentils
  • 1 cup of water

Method

The most important thing here is do not change the quantities or it will not work! You can double and triple but doing change the ratios.

  1. Add 60g of red lentils to a cup of semi warm water and leave them to soak for 6 hours or overnight, whichever is easiest. Then using a stick blender, nuke until everything is completely blended; it will take around 1 min to ensure that everything is smooth. Do not discard any of the water before blending!
  2. Take a good quality non stick pan and pour the batter onto the pan as if you were making a pancake, allow to cook for 2-3 minutes on the first side and then 1-2 min on the reverse.

The batter makes 3 good size wraps or lots of little ones.

Fill them with whichever veggies you fancy and enjoy!
