A little while ago I was perusing the shelves of my then local health food store, yup I am a sucker for those go in looking for one thing always and I mean always come out with way more than what I went it for! I guess the little pilgrimages to the halls of health get me all inspired!
Anyway, while I was in there amongst other things I picked up some powered beetroot I had planned to use it as a natural colouring in recipes for my daughter but it turns out that when mixed with yoghurt it’s surprisingly yummy! Now before you panic, because I am using something that’s not off the supermarket shelf you can buy this stuff fairly cheaply on Amazon (any of those will do but choose organic).
Beetroot is a good source of iron and folate (naturally occurring folic acid). It also contains nitrates, betaine, magnesium and other antioxidants (notably betacyanin).
Ingredients:
- 1 heaped teaspoon beetroot powder
- 200g coconut yoghurt
- 40g chopped strawberries
- 1 fig sliced
- 1 teaspoon chia seeds
- 30g almond butter
Method:
Mix the beetroot powder and the yoghurt together. Place all the other ingredients on top, stop to admire your work. Sit at a table and enjoy!
