Ingredients
- 2 ripe bananas
- 2 eggs
- 1 tablespoon melted extra virgin coconut oil
- Fresh fruit to garnish
½ teaspoon cinnamon (optional)
Method
- Blend the banana and egg with a stick blender until smooth
- Melt the coconut oil in a pan – useless if using a non-stick pan. Poor the batter into the pan so that the pancakes are roughly 8cm in diameter. You can normally get 2 -3
- In a pan in one go depending on the size of the pan. Cook for 2-3 min or until you can
- Flip them over and cook the other side of another 1-2 mins
- Add fruit to garnish … or if you’re like me grab them while they are still hot a try not to burn
