This morning was super exciting … apricots are back!! I’m probably the only person I know to get excited about seasonal fruit making a come-back. Just like long hot summers days I welcome their return with open arms and in the case of apricots just a fraction of mouth-watering drool!

This beta-carotene and fibre rich fruit is a good source of the vitamins C and A as well as copper. Apricots are rich in many plant antioxidants such as flavonoids which have been linked to the reduction of heart disease. Rich in carotenoids and xanthophylls two nutrients which researchers believe may help to protect your eyes against age related damage. Lutein also present in apricots appears to protect your eyes from damage cause by blue light, handy as your probably reading this on a blue light emitting smart phone or laptop!

A single apricot will provide you with 4-5 grams of anti-inflammatory catechins which have been shown to protect blood vessels from inflammation-related damage, leading to better blood pressure control!

Then, just as a little bonus, apricots are a good source of dietary fibre. Supporting digestive health. Half of the fibre contained within apricots consist of soluble fibre which can help control blood cholesterol levels.
